Caveats when using interrupts and breakpoints?

I found that things get better (bkpt caught in ISR) when I do the
LL_USART_EnableIT_RXNE(USART1); at the beginning (before the for(;;) ) of StartTask1.

Does this mean that interrupt was not enabled earlier? One thing you can check is turn off compiler optimizations as suggested before.

Also, this seems more like STMCudeIDE question and therefore, I’d recommend asking on ST forums.
